GORGONZOLA - BANANA SALAD DRESSING
INGREDIENTS:
1/4-pound crumbled gorgonzola cheese (Italian blue cheese),
1 and 1/2 ripe bananas,
3 teaspoons rice vinegar or red vinegar,
3 teaspoons chopped scallions,
salt and pepper to taste,
DIRECTIONS:
In a blender, mix all the ingredients for approximately
1 minute. Let dressing stand for at least 30 minutes
before adding to salad greens.
VARIATION:
Adding the crumbled gorgonzola at the end, after blending,
makes a crunchy - rather than creamy - dressing.
